About This Coffee
At first glance, this might seem like your typical washed Honduran coffee. But spend a little more time with it, and you'll discover there's much more beneath the surface.
Grown in the highlands of San Agustín at 1,700 meters above sea level, this lot undergoes a unique Barrel Fermentation Washed process, where the coffee is fermented in brandy-seasoned barrels before being washed and dried. The goal isn't to make the coffee taste like alcohol, but rather to enhance its complexity, sweetness, and aromatic depth.
The result is a cup that feels familiar yet intriguing—bright fruit notes upfront, a silky sweetness throughout, and a rich chocolate finish that lingers pleasantly on the palate.
Producer
This coffee comes from the mountainous region of San Agustín, Honduras, where coffee farming has long been a way of life for local families. The combination of high elevations, cool temperatures, and nutrient-rich soils creates ideal conditions for producing coffees with concentrated sweetness and vibrant flavour.
The SHG (Strictly High Grown) classification indicates that the coffee was cultivated at higher elevations, where cherries mature more slowly. This extended maturation period allows the coffee to develop greater complexity and sweetness before harvest.
Process
What makes this coffee particularly interesting is its Barrel Fermentation Washed process.
After harvest, the coffee cherries undergo fermentation in barrels that have previously been used to age brandy. During this stage, the coffee develops additional layers of aroma and flavour before being fully washed and dried.
Unlike heavily fermented coffees that can sometimes overpower the cup, this process is carefully controlled to complement the coffee's natural characteristics. The result is a profile that remains clean and balanced while gaining extra depth, sweetness, and complexity.
