This Gesha from El Diviso Farm is one of those coffees. Grown in the mountains of Huila, Colombia, it's processed using a unique Thermal Shock Washed method that brings out the coffee's natural clarity while preserving its delicate floral and fruity notes.
In the cup, you'll find juicy lychee, refreshing lemongrass, and soft osmanthus florals, finished with a silky, tea-like body. It's light, elegant, and the kind of coffee you'll want to slow down and enjoy.
Producer
El Diviso Farm is run by Néstor Lasso, a young producer who has become well known for his innovative approach to coffee processing.
Located in Pitalito, Huila, the farm sits at around 1,850 MASL, where the cool climate allows coffee cherries to ripen slowly and develop more sweetness and complexity.
Néstor and his team are constantly experimenting with different fermentation methods, always with one goal in mind—to bring out the very best in each coffee variety while staying true to its natural character. Today, El Diviso is recognised as one of Colombia's leading specialty coffee farms, producing coffees enjoyed by roasters and baristas around the world.
Process
This coffee goes through a Thermal Shock Washed process.
After fermentation, the coffee is washed using water at different temperatures. This carefully controlled step helps preserve the coffee's delicate aromas while enhancing its sweetness and clarity.
The result is a cup that's clean and expressive, allowing the Gesha's floral notes and vibrant fruit character to take centre stage.
