About This Coffee

This cup is not loud, overly funky, or aggressively fruit-forward. Instead, it leans into what makes washed and honey-processed Ethiopian coffees so loved in the first place—clarity, elegance, and clean fruit expression.

What stood out to us wasn’t intensity—it was balance.

Part of the BergWu Selection World Champion Series, this lot was personally selected by Berg Wu and comes from the highlands of Guji, Oromia, grown at 2,450 masl.

The cup opens soft and refined, with delicate peach sweetness and gentle lychee-like brightness. As it cools, a smooth honey sweetness begins to round everything out, giving the coffee a silky structure without losing its clarity.

It’s the kind of coffee that feels effortless to drink—clean, expressive, and quietly memorable.

Not every coffee needs to shout to leave an impression.

Honey Process

This coffee undergoes a carefully controlled honey process—designed to preserve sweetness while maintaining the clean profile Ethiopia is known for.

After harvesting, the cherries are pulped while retaining as much mucilage as possible. The beans then go through multiple stages of density sorting, selecting only the highest-quality beans before being transferred onto African drying beds.

From there, constant attention is required.

As the remaining fruit sugars dry around the bean, the coffee becomes highly sensitive to temperature, humidity, and fermentation. To prevent over-fermentation or unwanted defects, the beans are continuously turned and carefully monitored throughout the drying process.

Every step is managed with precision to create a cup that feels clean, sweet, and beautifully balanced.
