This coffee is produced at Chilaka Washing Station, located in the highlands of southern Ethiopia between 1,800 and 2,200 meters above sea level.
At these elevations, cooler nighttime temperatures slow down cherry maturation, allowing the coffee to develop more concentrated aromatics and refined acidity before harvest.
The result is a coffee with exceptional clarity and complexity.
Mars Project
This lot belongs to the Mars Project, a special collaboration between EightyPlus Coffee and ALO Coffee. The idea is simple: coffees that feel “out of this world.”
The project focuses on identifying and releasing the most exceptional coffees produced across ALO’s washing station network — coffees that go beyond the traditional grading system and showcase unique genetics, precise processing, and full traceability.
Among all the coffees we tasted from Eighty Plus, this one stood out immediately. It had a sense of precision and elegance that was difficult to ignore.
For us at Hisbrew, this is the coffee that represents the upper boundary of what Ethiopian specialty coffee can achieve
Process
Fully Washed — Raised Bed Dried
The cherries are first pulped to remove the outer skin before undergoing controlled fermentation to break down the remaining mucilage.
After washing, the parchment coffee is transferred to raised beds for slow drying under the Ethiopian sun.
At the high altitude of Chilaka, fermentation progresses more slowly and evenly, preserving delicate aromatics and producing a cup known for its clarity and structural balance.
In This Cup
This coffee opens with delicate magnolia florals, followed by bright clementine citrus.
As the cup develops, layers of apricot and nectarine sweetness appear, creating a silky and balanced mid-palate.
The finish is clean and vibrant, with a gentle red apple acidity that keeps the cup lively and refreshing.
Elegant, complex, and incredibly refined — this is a coffee that rewards slow drinking.
