This naturally processed lot from Buku Sayisa, Hambella, Guji is one of those coffees. Grown at 2,300 MASL in the lush highlands of Ethiopia, the slow cherry maturation at high altitude allows the fruit to develop exceptional sweetness and complexity.
The result is a vibrant cup bursting with juicy stone fruit, ripe berries, delicate florals, and a tea-like finish that keeps you coming back for another sip.
About This Coffee
Buku Sayisa is located in the Hambella district of Ethiopia's renowned Guji region, where smallholder farmers cultivate traditional heirloom coffee varieties on fertile volcanic soil.
Only fully ripe cherries are handpicked before undergoing the natural (dry) process, allowing the fruit to remain around the bean during drying. This slow drying method enhances sweetness while developing the lively fruit character Ethiopia's naturals are celebrated for.
Every cup reflects both the region's remarkable terroir and the care taken by the farmers throughout harvest and processing.
Process
This coffee is processed using the Natural method — one of Ethiopia's most iconic processing styles.
After harvesting, the whole coffee cherries are carefully dried on raised beds under the Ethiopian sun. During this time, the fruit slowly transfers its sugars and flavour compounds into the bean before the dried fruit is removed.
The result is a coffee with greater sweetness, expressive fruit flavours, and a beautifully aromatic cup while still maintaining remarkable elegance and clarity.
