At 1,730 MASL, the combination of cool mountain temperatures, rich volcanic soil, and careful cultivation allows the coffee cherries to ripen slowly, developing remarkable sweetness and complexity.
This lot is produced from Purple Caturra, a variety prized for its vibrant fruit character and silky sweetness. Every stage—from harvest to processing—is carefully managed to bring out the coffee's fullest potential while preserving balance and clarity.
Process
This coffee undergoes an innovative Mango Co-Fermented Washed process.
After harvest, the coffee is fermented using a specially prepared culture enriched with fresh mango, allowing naturally occurring microorganisms to enhance the coffee's natural flavours. Rather than overpowering the cup, the process gently amplifies the coffee's tropical fruit character and sweetness.
Once fermentation is complete, the coffee is thoroughly washed and slowly dried, producing a cup that is vibrant, clean, and beautifully balanced.
The result is a coffee bursting with juicy tropical fruit, candy-like sweetness, and a silky finish that remains remarkably refined.
