Origin & Producer

Grown in the Guji Highlands of Odo Shakisso Woreda, within Ethiopia’s Oromia Region — an area renowned for producing some of the country’s most expressive coffees. Sitting at elevations of 1,800–2,200m, these highlands benefit from cool temperatures, fertile soils, and slow cherry maturation, all of which contribute to enhanced sweetness, vibrant acidity, and layered complexity. Coffee is cultivated by smallholder farmers growing diverse Ethiopian heirloom varieties, preserving the genetic richness of Arabica’s birthplace.

Processing

Natural (sun-dried). Ripe coffee cherries are dried whole under the Ethiopian sun, allowing sugars and fruit character to fully develop within the bean. This process amplifies sweetness and body while retaining clarity, resulting in a fruit-forward yet clean cup — a hallmark of well-executed Guji naturals.

Tasting Notes

  • Aroma: Peach, strawberry, bergamot, and frangipani — floral and fruit-forward on the nose.

  • Cup Flavour: Opens with juicy peach and strawberry jam, balanced by bright bergamot. As the cup develops, subtle hints of purple grape and light orange blossom emerge, leading to a delicate, smooth, and refined finish.

Why You'll Like It

This Guji natural shines as a filter-roasted coffee, where its high-altitude terroir and heirloom varietal diversity translate into exceptional clarity, sweetness, and floral expression. Expect a vibrant yet balanced cup with juicy fruit, elegant aromatics, and a smooth, delicate finish — perfect for pour-over and other filter brews that reward nuance and complexity.
