This Catuai from El Bajareque Coffee Lab in Boquete, Panama challenges the idea that only Geisha can produce an extraordinary cup. Grown at 1,600 MASL and processed using an innovative Double Fermentation method, this coffee showcases just how expressive the humble Catuai variety can be.

Expect layers of tropical fruit and juicy stone fruit, lifted by bright lemon acidity before finishing with comforting notes of brown sugar and cacao.

About This Coffee

El Bajareque Coffee Lab is the experimental processing programme of Beneficio El Bajareque, one of Panama's leading specialty coffee processing facilities. Working with cherries sourced from over 100 farms throughout Boquete, the team focuses on pushing the boundaries of post-harvest processing while showcasing the incredible potential of Panama's coffee.

Rather than relying on rare varieties, this lot demonstrates how thoughtful processing can transform a classic Catuai into a coffee full of complexity, sweetness, and elegance.

Process

This coffee undergoes a carefully controlled Double Fermentation process.

After the coffee cherries are depulped, they first undergo a traditional wet fermentation to remove the sticky fruit surrounding the bean. The coffee is then placed into a sealed, low-oxygen environment for a second fermentation before drying begins.

This additional stage encourages the development of deeper fruit flavours, brighter acidity, and greater sweetness while preserving the clean, refined profile that Boquete coffees are known for.

The result is a vibrant, layered cup that feels both expressive and remarkably balanced.
