Introduction to Water Chemistry
Water is the main ingredient in coffee — yet it’s often the least understood.
This workshop is designed as a clear, beginner-friendly introduction to how water composition shapes what you taste in the cup.
Through a guided cupping, participants will taste six coffees, each brewed with four different water compositions. By comparing these side by side, you’ll experience firsthand how minerals can highlight or mute key attributes such as acidity, sweetness, clarity, and texture.
Rather than focusing on complex theory, this session is built around sensory understanding. The goal is to help you recognise patterns in the cup — what changes, why it changes, and how to start thinking about water as a tool.
The workshop is run by Simon Gautherin — 2026 World Brewers Cup Runner Up, Q Grader, and co-founder of APAX LAB — alongside the APAX team, bringing years of research and real-world application in water design.
