About This Coffee/ Origin
When we first came across coffees from El Paraíso, we were curious.
Not just because of the name — but because of the reputation behind it.
Finca El Paraíso, in Piendamó, Cauca, is known in specialty coffee circles for pushing the boundaries of post-harvest processing. Behind it is Diego Samuel Bermúdez, a producer whose work blends science, curiosity, and deep dedication to flavour.
When we cupped this lot, it stood out almost immediately.
There was a delicate lavender-like aroma, layered with honeyed plum sweetness and a soft spice that lingered in the cup. Bright, expressive, yet incredibly clean — the kind of coffee that slowly reveals itself sip after sip.
This is Caturra Chiroso, grown at 1,960 masl in the highlands of Cauca — one of Colombia’s most celebrated coffee-growing regions.
Producer / Farm Info
Finca El Paraíso began as a family dream.
In 2008, Diego Bermúdez and his family started cultivating coffee across the mountainous terrain of Vereda Los Arados in Tunía, within the municipality of Piendamó.
Today the farm spans 49 hectares and has become internationally recognised for its innovative processing methods.
It is also home to INDESTEC S.A.S — the Bermúdez family’s research platform dedicated to Innovation and Technological Development for Agriculture. Here, Diego and his team experiment with fermentation science, microbial cultures, and processing technology to create new and expressive flavour profiles.
Their work has drawn global attention. Diego reached the Top 10 of the 2018 Cup of Excellence, and again appeared among the winners in 2019, cementing El Paraíso as one of the most progressive farms in Colombia.
What started as one farm has now grown into a network of farms under the family emblem — all built around a shared vision: pushing the boundaries of Colombian specialty coffee while supporting the communities around them.
Varietal & Process
The variety Caturra Chiroso is believed to originate from genetic mutations discovered in the high-altitude mountains of Antioquia, Colombia. It thrives in cooler climates and lower light intensity, which contributes to the development of aromatic compounds responsible for complex and expressive flavour profiles.
At Finca El Paraíso, processing is approached with scientific precision.
For this lot, 90% ripe and 10% semi-ripe cherries were carefully selected to preserve both sweetness and subtle spice-like precursors found in the fruit pulp. The cherries were then cleaned and disinfected to ensure that fermentation would be controlled and consistent.
The coffee then underwent a carefully monitored fermentation before being processed using El Paraíso’s signature Thermal Shock washing technique.
During Thermal Shock, the coffee is briefly exposed to warm water before being rapidly cooled with cold water. This sudden temperature change opens the pores of the coffee seed and allows flavour precursors produced during fermentation to bind more effectively to the bean before the pores close again.
The coffee is then dried using controlled low-temperature drying systems, designed to preserve the delicate aromatic compounds created during fermentation.
The result is a cup that is incredibly clean, aromatic, and structured, showcasing the expressive potential of Caturra Chiroso.

Diego’s Caturra Chiroso isn’t accidental. It’s the result of years of obsession, experimentation, and refinement. Every fermentation, every cherry selected, every controlled drying step reflects his pursuit of the brightest, sweetest, most expressive cup.
Among all the Colombian lots we cupped, this one stood out not only for its cup—but for what it represents: a family farm combining science, craft, and vision to push specialty coffee forward.
We decided to roast this coffee to work beautifully across both filter and espresso.
As a filter, it highlights its floral aromatics and elegant sweetness.
As espresso, the structure becomes more pronounced, bringing out deeper fruit sweetness and spice complexity.
It’s a coffee that reveals different layers depending on how you brew it — something we always love sharing.
