About This Coffee

Costa Rica Sumava Black Moon isn’t your typical clean and bright Costa Rican—it leans deeper, darker, and a little more mysterious.

Grown high in the West Valley at Finca El Kinkajou, this lot comes from renowned producer Francisco Mena, known for pushing boundaries in processing. At an altitude of 2,450 masl, the cherries develop intense density and complexity before even reaching the mill.

What makes this coffee stand out is its Black Moon processing—a full-berry honey method combined with low-temperature, extended fermentation. Instead of rushing the process, the coffee is carefully rested and slowly developed, allowing sugars and fruit characteristics to fully infuse into the bean.

The result is something quite unique for Costa Rica. It still holds structure and clarity—but with a deeper, richer fruit profile that feels almost wine-like.

This isn’t a loud coffee—but it’s one that unfolds slowly, sip by sip, revealing layers the more you pay attention.


Black Moon Process

This coffee goes through a unique Black Moon process—a method that’s all about patience and control.

Instead of removing the fruit right away, the coffee is dried as a full berry (whole cherry), allowing the sugars and fruit compounds to slowly infuse into the bean. What makes it even more special is the low-temperature, extended fermentation—carefully managed to develop depth without overpowering the cup.

The cherries are then rested and dried gradually, rather than rushed, giving the coffee time to build structure and complexity.

The result?
A cup that leans deeper and richer—bringing out those dark berry and black fruit notes, while still finishing clean with a touch of brightness.
