Grown in the picturesque Apaneca-Illamatepec mountain range of El Salvador, this washed Red Bourbon lot comes from Finca La Fany, managed by the Silva Family. The farm sits between 1,450 – 1,550 masl, where cool mountain air and fertile clay-loam soils create ideal conditions for slow cherry maturation. With generations of experience, the Silva family’s careful cultivation brings out the elegant and balanced character that defines this coffee.
Processing
This lot is fully washed, meaning ripe cherries are pulped, fermented, and thoroughly washed before being dried on raised beds under the sun. The result is a clean, tea-like cup that highlights the Red Bourbon variety’s refined sweetness and delicate florals, with a smooth, silky texture.
