Origin Details
This coffee comes from Bacha Washing Station in the Sidama Zone of Southern Ethiopia, one of the most celebrated coffee-growing regions in the world.
Coffee here grows at 1,700–2,100 meters above sea level, where cool nights and slow cherry maturation allow the beans to develop remarkable sweetness and aromatic complexity.
The farms supplying Bacha are typically smallholder plots, often intercropped with banana and enset plants, where coffee trees grow in rich volcanic soil and benefit from the region’s highland climate.
About This Coffee
This lot is produced by ALO Coffee, a producer network known for its disciplined processing and high-quality selections across Ethiopia.
When we cupped through more than twenty coffees presented by Eighty Plus Coffee, three coffees from ALO immediately stood out to us — and the Bacha Natural was one of them.
While many Ethiopian naturals can lean heavily fermented or overly jammy, this lot showed something different: clarity within fruit intensity.
It was expressive, vibrant, and beautifully structured — exactly the kind of coffee we love sharing with our community.
Process
Natural (Sun-Dried on Raised Beds)
Natural processing is the oldest method used in Ethiopia.
Instead of removing the fruit immediately, the whole cherries are laid out on raised drying beds, where they slowly dry under the sun for four to six weeks.
During this time, the sugars and aromatic compounds from the fruit are absorbed into the seed, producing the lush fruit notes that Ethiopian naturals are famous for.
At Bacha Washing Station, the process is handled with exceptional care:
Cherries are sorted twice for ripeness
Drying beds are carefully managed
Cherries are turned regularly to prevent uneven fermentation
Moisture levels are constantly monitored
The result is a natural coffee that is vibrant yet remarkably clean.
In This Cup
This coffee opens with a striking rose-like floral aroma before the fruit notes appear.
The cup quickly unfolds into bright mandarin citrus, followed by juicy cherry and raspberry sweetness across the mid-palate.
Despite its fruit-forward character, the finish remains clean and elegant, without the heavy fermented character sometimes found in lower-grade naturals.
It’s a vibrant, aromatic coffee that shows Ethiopian natural processing at its most expressive.
