From the high hills of Gakenke, Rwanda, this Red Bourbon lot is cultivated 2,200 meters above sea level. The region’s high altitude, fertile volcanic soil, and cool climate create the ideal environment for slow cherry maturation — developing rich sweetness and layered acidity. Rwanda’s smallholder farmers in this area are known for their meticulous picking and dedication to quality, contributing to the country’s growing reputation for vibrant, fruit-forward coffees.
🧪 Processing
This coffee is processed using the Anaerobic Natural method. Whole cherries are fermented in sealed tanks with limited oxygen, intensifying fruity esters and wine-like aromatics. After fermentation, the cherries are carefully sun-dried on raised beds to achieve a clean yet expressive cup — balancing Rwanda’s signature clarity with bold experimental depth..
